Founder & President

Dustin Lancaster is a Los Angeles based restaurateur and hotelier. An Oklahoma native, Dustin was drawn to LA to study theater at the California Institute of the Arts. After spending most of his 20’s acting in television and commercials, he enjoyed a transformative five year stint as the bar manager at Café Stella. Having fallen in love with the restaurant business, Dustin opened his first venture, Bar Covell, in 2010.

A decade later, Dustin’s group, Drumm Hospitality, comprises some of the Eastside’s most beloved and acclaimed restaurants, bars and hotels. Founded on the belief that all good hospitality ventures are a result of great collaborations, Dustin has worked with a talented group of partners and staff to develop a variety of diverse projects. Their portfolio includes wine bars, neighborhood restaurants, curated markets, boutique hotels and more. Formerly known as An Eastside Establishment, Drumm Hospitality has since expanded beyond the boundaries of the Eastside of Los Angeles.

Each of these concepts was inspired by the eclectic and artsy nature of the Eastside, and rooted in Dustin’s passion for quality service, engaging design aesthetic and excellent food and beverage. In addition to developing his own places, Dustin also utilizes his wide-ranging expertise in the hospitality industry on a variety of consulting projects. His’s ventures have garnered such accolades as Esquire’s “Best Bars in America,” Los Angeles Magazine’s “75 Best Restaurants,” and “best of” lists in Vogue, Travel & Leisure and Condé Nast Traveler.

Locatelli appeared 20 days after Lancaster opened his first bar, Covell. Their synergy was immediate and together they went on to open more than a dozen additional companies, most of which have exceeded their expectations and cemented their reputation amongst the Eastside. She sees numbers as seekers of truth, perfect in their balance and honesty. Locatelli is resourceful under pressure, reliable, and above all, loyal. “No Photographs.”

Sarah Dietz has spent her whole life in restaurants. A Los Angeles native born into a family of food writers and restaurant suppliers, she spent her childhood in restaurants and in her first job joined the team at Santa Monica landmark Valentino.

After decamping to New York, Sarah continued her path in operations, working at a number of restaurants in the Union Square Hospitality Group portfolio. These wide-ranging experiences from fast casual to fine dining were unified by Danny Meyer’s unique and enduring commitment to hospitality that imbued each of his businesses. Sarah left Maialino to open Huertas, an East Village Basque restaurant. As Service Director, she codified a style of service that was rewarded with a glowing two-star review from the New York Times.

Looking to explore a new part of the industry, Sarah developed a Director of Operations role at Sleeping Giant NY, operators of some of Manhattan’s favorite neighborhood and industry hangouts. Sarah helped bring to life their most ambitious project yet, The Spaniard, an Irish pub homage to the classic New York tavern in an iconic West Village space.

After a decade in New York, Sarah relocated back to Los Angeles in 2017. Since then she has been the Director of Operations for Drumm Hospitality, where she works alongside principal Dustin Lancaster running some of the Eastside’s most beloved restaurants, bars, and hotels.
